The Story Behind Little Ox Coffee

Little Ox Coffee opened its doors in a small storefront in Fullerton with a simple frustration behind it: great matcha and Asian-inspired coffee drinks were hard to find outside of major cities. Our founders wanted to change that — bringing the flavors of Japanese tea houses and Southeast Asian dessert culture into a neighborhood café that still felt approachable, not intimidating.

That idea shaped everything, from how we source our matcha (direct from Japanese producers, ceremonial grade only) to how we train our baristas (every new hire spends weeks learning ratios before they touch a customer’s cup). We’re not trying to be a chain. We’re trying to be your café — the place where the barista remembers your order by the third visit.

Today, the shop draws a mix of students who camp out with laptops for hours, remote workers between calls, and neighbors who just want a good cup of coffee without driving across town. That mix is exactly what we hoped for when we started.

We also lean into small details most cafés skip. Milk is steamed to a specific temperature for each drink type, so a matcha latte never tastes scalded and a cortado never tastes watery. Syrups like pandan and brown sugar are made in small batches on-site rather than ordered pre–mixed, which means flavor can shift very slightly week to week — a sign of real ingredients, not a mass-produced syrup pump. Even our cups carry the Little Ox logo as a small reminder that this is an independent, family-run shop, not a franchise.

Fullerton has no shortage of coffee options, and we don’t take it for granted that people choose to walk through our doors. Every recipe on the menu has been tested, adjusted, and tested again until it earned a permanent spot — and every new seasonal drink goes through the same process before it ever reaches a customer’s hands.
